TOFU LASAGNA 
2 1/2 c. coarsely chopped spinach, washed 3 times and drained
1 onion, coarsely chopped
2-4 cloves garlic, minced
2 lbs. well drained tofu, mashed
3 eggs, well beaten
1/2 lb. lasagna noodles
1 1/2 tsp. salt
2 tbsp. dried parsley
1/2 tsp. pepper
1 c. Parmesan cheese, grated
2 c. Mozzarella cheese, grated
4-6 c. tomato sauce

Saute onion and garlic in oil. Mix with spinach, tofu, Parmesan cheese, eggs, salt, pepper and parsley. Cook noodles, drain and rinse.

Place half of the noodles in a 13x9x2 pan. Spread with half of the tofu mixture, then the Mozzarella cheese and then the tomato sauce. Repeat layers ending with tomato sauce. Bake, uncovered, at 375 degrees for 30 minutes.
