TOFU MANICOTTI 
1 lb. tofu, mashed
1 tbsp. olive oil
2 tsp. minced parsley
1 tsp. salt
1/4 tsp. garlic powder
1 qt. tomato sauce
12 manicotti shells

Preheat oven to 400 degrees. Combine first 5 ingredients in a bowl; mix well. Pour 1 cup tomato sauce into a 9x12 inch pan. Fill manicotti shells with tofu mix. Spread shells in pan. Pour in remaining tomato sauce. Cover with foil and bake for 40 minutes.
