POTATO CANDY 
1/2 cup mashed potatoes
powdered (confectioners') sugar
peanut butter

Combine 1/2 cup mashed potatoes and power sugar till is firm enough to roll. The mixture will become very wet; just keep adding powdered sugar. roll out on powdered sugar like noodles. Cover with peanut butter. Roll into jelly roll cut into small pieces. Very rich!

Instead of making noodles, my mother rolled into walnut size balls then froze the balls on a cookie sheet for an hour or so. She dipped these into melted chocolate and put back onto the cookie sheet on wax paper to set up. They tasted like a mounds bar. yummy

Over the years of making this candy, I found that rolling it out on a brown paper bag with the sugar works best. The bag helps absorb the starch off the candy to help it set up better. This is an old Irish recipe.

My mother made these for years only at Christmas. The recipe has been handed down to me then to my daughter. This is the most awesome and rich candy ever. In high humidity areas it's very hard to make.......

In our family we use a whole box of confectioner's sugar with a tad of milk to melt. Roll out thinly on wax paper, spread on peanut butter, roll from edge. We then put the whole roll in freezer for a few hours and then cut into strips. Keep frozen til serving day.

I am 62 years old now and My mother and I made this when I was 8. I remeber her making it for my 2nd grade teacher and and mom said she made it as a young adult. mom was born in 1912. Love this my grand chlidren love to make it. We made it in Utah and Arizona. I dont remember a difference? But there may be.

This candy recipe originated during the time of the depression. Mothers wanted to make their children a snack, and they didn't have access to alot of ingredients. It's amazing how recipes can be handed down from generation to generation! : D
