POTATO CANDY 
1/2 cup mashed potatoes
powdered (confectioners') sugar
peanut butter

Combine 1/2 cup mashed potatoes and power sugar till is firm enough to roll. The mixture will become very wet; just keep adding powdered sugar. roll out on powdered sugar like noodles. Cover with peanut butter. Roll into jelly roll cut into small pieces. Very rich!

I use this recipe to make peanut butter eggs for Easter. Instead of rolling it and spreading the peanut butter I mix the peanut butter into the potato and sugar until a dough consistency, I then form a ball and shape into egg form. I dip the formed eggs into melted chocolate amd let dry. It is best to refrigerate the finished product.

Its so funny! My mom used to make this and everyone would say ewwww, until they tried it! Now my kids can't wait for me to make it at christmas time! I too thought it was a recipe my family made up.

When I was very young, 4 or 5 my babysitter made this for Christmas. No one in my family remembered it. They all joked I was imagining the whole thing. For over 50 years, I thought about potato peanut butter candy and could not find out how to make it. This will be our new family tradition. Thank You :)

I was taught how to make this when I lived in Tennessee, I was told it was a depression candy, every one has potatoes. I make it every year now... people love it. Also if you like fruit cake try Mrs Harvey's White Fruitcake recipe... my great-grand mother made it..a family hit.. now I make it for my Dad and Aunts, Uncles, and friends...Merry CHRISTmas to all

I live in the Houston, TX area and we have very, very high humidity. I have found this does not affect the candy. My grandmother was raised on this candy and her parents were both Irish. She never knew where the recipe came from. But it has been handed down not to my Great grandchildred and the way they like it , I'm sure it will be passed on. And yes, it is very rich and the only way I like peanut butter.

My mother passed away last year at 99 years ..we missed writing down this recipe. So I'm so glad to have it. She would make patties (like a mint) and then dip them in melted Baker's bittersweet chocolate...cuts the sweetness.

I make potato candy every year for my husband. His mother made it every Christmas for him and his brother. Take a potato about the size of an egg and bake it (I microwave it). Peel it and mash it in a bowl. Begin adding powdered sugar until it forms into a ball that can be rolled out on waxed paper. Sprinkle powdered sugar on the paper and rolling pin. After it is thin, spread a thin layer of peanut butter. Roll it into a jelly roll, wrap it in wax paper and refrigerate. To serve, slice it in small pieces. We do not add vanilla nor dip it in chocolate, but I think it would be very good. It is a rich candy! I thank my sister-in-law for passing this recipe on to me.

I had this as a treat from an old German lady when I was in elementary school. I am now 63 years old. I made this for my children, and now they make it. It is very easy. I add just a little bit of vanilla, maybe 1/2 teaspoon. There is a flatness to the taste due to the powdered sugar but the vanilla takes care of that. Also add a little salt, it makes a big difference.
