POTATO CANDY 
1/2 cup mashed potatoes
powdered (confectioners') sugar
peanut butter

Combine 1/2 cup mashed potatoes and power sugar till is firm enough to roll. The mixture will become very wet; just keep adding powdered sugar. roll out on powdered sugar like noodles. Cover with peanut butter. Roll into jelly roll cut into small pieces. Very rich!

My Dad made potato candy every year. He would make half like this and the other half was rolled with no peanut butter but peppermint oil. They were dipped in chocolate and rolled in coconut. So delish!

I'm very fond of recipes of yesteryears. After reading the comments I realised that the recipe is more than a 100 years old and still a hit with all folks! I'm surely going to make it this Christmas..and maybe chocolate coated eggs for Easter ! Thank you so much !!

okay first of all you have to put 2 teaspoons of vanilla extract with the potatoes and the confectioners sugar and then roll it out on wax paper that is the best way to go my grandmother made this recipe for 60 years now I'm making it it has been a tradition around Christmas and Thanksgiving time to make this potato candy love it rich and melts in your mouth

I learned how to make this in Home-Ec in 1949 and have used both white potatoes and sweet potatoes. If you microwave the potatoes are not quite as wet. I do not use the peanut butter but make small balls on toothpicks and dip in various chocolate and different colored sprinkles for various holiday buffets. They do go quickly.

My Great Grandmother always made this. Seems like hers had big crystals of sugar on the outside? Anyway I've frozen it all day and its still soooo runny! I used 2 little potatoes and 1 bag of powdered sugar and its clearly way too much potato! Oh well. I went ahead and cut into smaller pieces and put in Tupperware container w/ wax paper between layers, then put it back in the freezer! Wish me luck!

My grandmother used to make this candy at Christmas time every year and it always went fast. Since her passing I have started making it every year. My mom is not a cook, bless her heart. But this is super easy and a great recipe to get the kids involved with. My 8 year old helps me with this now and maybe someday she will even make this and pass this along with her kids. Another variation I have experimented with and also make is chocolate potato candy... Make it the same as explained but add in 1/8 cup of cocoa powder when mixing in the powdered sugar and instead of peanut butter use a hazelnut spread such as NUTELLA then roll wrap refrigerate and slice... my family loves both recipes... Hope this gives you guys a little more variation on what is already, in my opinion, my FAVORITE christmas candy.

It really surprises me to see just how many people have made, had, and enjoy this candy. Its a Christmas tradition in my family. The recipe is handed down from parent to child. When I first had it my grandmother had made it for me, since her passing its become a special thing. Most of the recipes I have found call for other ingredients so its just not the same. We mix the potato and sugar until it becomes dough and then we take baseball size portions and roll them out on the counter dusted with more powdered sugar, then we smother it with creamy peanut butter, roll, slice, and store in Christmas tins with wax paper in between the layers of slices.

As the other posters have mentioned, make the candy with mashed potato and ribbon in the peanut butter. Make odd shaped balls, roll in cinnamon sugar and call them Irish potato candy- serve for St. Pat's! Put them into little green paper cups.

My mother made this candy too when I was growing up, but she never put the potato in it. She used powered sugar a tablespoon of milk and a teaspoon of soft butter and made a ball of dough. Then rolled it out on a plate with powdered sugar on it and spread peanut butter on top. Then rolled it up and sliced it. I love it but it can put the pounds on you.
