SALPICON (CHICKEN SALAD) 
2 c. cooked, diced chicken
2 c. cooked, diced potatoes
1/2 c. cooked, diced carrots
2 hard-boiled eggs, diced
1/2 c. cooked peas
1/2 c. raisins
Salt and pepper to taste
Lettuce leaves

DRESSING:

2 tbsp. honey
1/2 c. oil
1/4 c. lemon juice
Salt and pepper to taste

Mix all salad ingredients in a large bowl. Mix honey-lemon dressing by mixing dressing ingredients together. Toss dressing with salad and serve salad in lettuce leaves. Serves 5.
