FRUIT CUSTARD 
3 tbsp. sugar
2 tbsp. cornstarch
1/4 tsp. salt
1 1/2 c. milk, scalded
2 beaten egg yolks
2 bananas, sliced (optional)
1/3 c. orange juice
1 1/2 tsp. grated orange peel
2 tbsp. sugar
2 egg whites, beaten stiff

Combine first 3 ingredients in top of double boiler; gradually add milk and cook over low heat until thick, stirring constantly. Put back on top of double boiler; cover and cook over hot water 10 minutes. Slowly add part of hot mixture to egg yolks, then return to remaining hot mixture. Cook over hot water 5 minutes, stirring constantly; cool. Add bananas, juice, and peel. Gradually beat sugar into egg whites; fold into custard and chill.
