PIQUANT BEETS 
2 c. sliced beets
2 tbsp. sugar
1/2 c. crushed pineapple with juice
2 tbsp. butter
2 tsp. cornstarch
2 tbsp. vinegar
Salt & pepper to taste.

Combine pineapple with vinegar. Heat to boil. Combine 2 tablespoons sugar with cornstarch. Stir to mix well and pour all at once into boiling mixture. Stir briskly while it cooks until clear and thick. Add beets and butter. Season to taste and let heat over low heat, about 10 minutes.
