2 c. sugar
1 c. oil
3 eggs
2 c. plus 2 tbsp. flour
1 tsp. salt
2 tsp. vanilla
2 tsp. baking soda
1 (#2) can diced beets
2 c. crushed pineapple
1 c. raisins
1/2 c. coconut

Mix all ingredients well and pour into greased and floured 9x13 inch pan. Bake at 350 degrees for 45 minutes.
