PINEAPPLE BEET CAKE 
2 1/2 c. + 2 tbsp. flour
1 1/4 c. cooking oil
3 eggs, slightly beaten
2 c. sugar
1 tsp. salt
2 tsp. baking soda
2 tsp. vanilla
2 tsp. cinnamon
1/2 c. coconut
1 c. chopped nutmeats
1/2 c. crushed pineapple
1 c. (16 oz.) shoestring beets

Blend in above order in large bowl. Bake 35-45 minutes, 350 degrees. Ice with cream cheese icing or dust with powdered sugar real moist or cottage cheese, butter and powdered sugar.
