RED BEET CAKE (OR RED DEVIL
CAKE)
 
2 eggs
1 1/2 c. sugar
1 c. oil
1 tsp. vanilla
2 c. flour
1/2 c. cocoa
1/2 tbsp. baking soda
1/2 tsp. salt
2 c. diced beets, drained (reserve juice, 1/2 c.)

Preheat oven to 350 degrees. Combine eggs, sugar, oil and vanilla. Beat well. Combine dry ingredients and add alternately with beet juice to egg mixture. Beat well. Stir in beets. Pour into a greased 12 x 20 inch pan. Bake 35 to 40 minutes or until done. Frost with your favorite frosting. Freezes well. Makes about 24 servings.
