BEET SURPRISE CAKE 
2 tsp. lemon juice
1 c. grated beets
2 1/2 c. all-purpose flour
1 tsp. salt
2 tsp. baking soda
2 c. sugar
1/2 c. cocoa
1 1/4 c. melted butter
4 eggs, beaten
2 tbsp. honey or syrup
1/2 c. milk
2 tsp. vanilla extract

Sprinkle lemon juice over beets; set aside. Combine next 10 ingredients in large mixing bowl. Stir in beets. Beat 2 minutes at medium speed on electric mixer. Pour into a greased 13"x9"x2" pan. Bake at 350 degrees for 40 minutes. Cool and frost with Cream Cheese Frosting, below.

2-3 tbsp. half & half
1 (3 oz.) pkg. cream cheese, softened
1 (1 lb.) box powdered sugar
1 tsp. vanilla extract
Pinch of salt
Chopped pecans (opt.)

Combine half and half, cream cheese, vanilla and salt. Add powdered sugar, beating until fluffy. Spread over cooled cake. Sprinkle with chopped pecans, if desired.
