POTATO BISCUITS 
1 c. sifted enriched flour
3 tsp. baking powder
1 tsp. salt
2 tbsp. shortening
1 c. mashed potatoes
About 1/2 c. water or milk

Mix and sift flour, baking powder and salt. Blend in shortening. Add potato and mix thoroughly. Then add enough liquid to make a soft dough. Roll dough lightly to about 1/2 inch in thickness. Cut into biscuits. Bake in hot oven (400 degrees) 12-15 minutes.
