SWEET POTATO BISCUITS 
3/4 c. mashed sweet potatoes, yams or pumpkin
2/3 c. milk
4 tbsp. melted butter
1 1/2 c. flour
4 tbsp. baking powder
1 tbsp. sugar
1/2 tsp. salt

Measure potato, milk and butter into mixing bowl, blend well. Sift flour, baking powder, sugar and salt over potato mixture with fork. Stir just enough to moisten flour. Turn out on lightly floured board and toss gently until outside of dough looks smooth. Roll 1/2 inch thick; cut; bake on greased sheet at 450 degrees for 12-15 minutes. Makes about 1 dozen.

Note: Can also use winter squash, but must use 1/4-1/2 cup more flour. These are great after holidays with homemade turkey soup made from leftover turkey.
