POTATO BISCUITS 
2 c. mashed potatoes
2 c. flour
1 tbsp. salt
4 tbsp. baking powder
1 egg
4 tbsp. milk
2 tbsp. melted butter

Mix together flour, salt and baking powder, set aside. Combine egg, milk, and butter, mixing well. Stir in potatoes. Add dry ingredients. Stir and then turn onto floured board and knead to make a smooth dough. Add flour if necessary. Roll dough to 3/4 inch thick. Cut with round cookie cutter or glass top. Brush the tops with milk. Bake in a 425 degree oven for 18 minutes.
