CANDIED ORANGE PEEL 
4 to 6 oranges, scored in quarters
6 c. water
2 c. sugar
1 c. water

With a sharp knife or orange peeler, score and peel 4 to 6 oranges in quarters. Remove peel with fingers. Heat peel and 6 cups water in a large pan to boiling. Simmer 30 minutes. Drain and repeat process with 6 cups fresh water. With a spoon, gently scrape off remaining white membrane from peel. Cut peel lengthwise in 1/4 inch strips. Heat 2 cups sugar and 1 cup water to boiling, stirring until sugar is dissolved. Add peel and simmer 45 minutes, stirring frequently. Turn mixture into strainer and drain thoroughly. Roll peel in about 1 cup granulated sugar being sure to separate each strip. Spread on wax paper to dry.
