JELLY ROLL | |
6 eggs 1 c. sugar 1 c. flour 1/4 tsp. cinnamon 1/4 tsp. nutmeg 1/4 tsp. cloves 1 tsp. vanilla extract 1 tsp. baking powder 3/4 c. jelly, any type of preservative or frosting Sugar (confectioners sugar does not always work well) Preheat oven to 350 degrees. In the mixing bowl combine eggs and sugar until creamy consistency (approximately 15 minutes). Add cinnamon, nutmeg, cloves and vanilla extract. Beat for a few minutes, then add flour and baking powder. Beat for approximately 15 minutes or until creamy consistency. Grease pan with cooking spray during the last 15 minutes step. Spread batter in pan evenly. Place in preheated oven. Bake for approximately 17 minutes or until golden brown and spongy to the touch. DO NOT LET THE ENDS OVERCOOK AND HARDEN. (recommend using a timer) During the baking process, place a large sheet of waxed paper on a dish towel. Spread sugar evenly over the waxed paper. Take out 3/4 cup of jelly (any type of preservative or filling may be used or even frosting). Stir it until you get almost a liquid consistency (this will make the spreading easier). When roll is baked, invert it on to the prepared waxed paper. Quickly spread the filling. Take one end and tuck it in and start rolling away from you. DO NOT LET THE ROLL COOL OR ROLLING MAY BE DIFFICULT. Enjoy! Enjoy! |
