ZUCCHINI & CARROT CAKE | |
1 1/2 c. flour 1 1/2 tsp. cinnamon 1/2 tsp. nutmeg 1 tsp. baking soda 1/2 tsp. salt 1/8 tsp. baking powder 1 egg 1 1/4 c. sugar 1/2 c. brown sugar 1/2 c. oil 1 tsp. vanilla 1 1/2 c. grated zucchini 1/2 c. grated carrots Sift dry ingredients. Beat egg and add sugars, then add oil and vanilla. Mix until smooth. Stir in vegetables. Add dry ingredients. Pour into greased bread pan. Bake 45-55 minutes at 350 degrees until cake springs to touch. Cool and remove. |
