BLUEBERRY MUFFINS | |
1 c. fresh or frozen berries, drained 2 tbsp. sugar to berries 2 c. flour, sifted 3 tsp. baking powder 1 tsp. salt 2 tbsp. sugar 1 egg, beaten 1 c. milk 6 tbsp. melted shortening Mix together flour, baking powder, salt, and sugar. Mix together egg, milk and shortening. Add berries and liquid ingredients to flour mixture together, so as not to be over mixing batter. Sprinkle top of muffins with 4 teaspoons sugar, 12-14 muffins. Bake at 425 degrees for about 20-25 minutes. |
