DANISH POTATO SALAD 
1/4 c. vinegar
1/4 c. water
1/4 c. sugar
1/4 tsp. salt
1/16 tsp. pepper
1 tsp. prepared mustard
2 eggs, well beaten
1 c. salad dressing
4-6 c. cubed potatoes
2 hard boiled eggs, chopped
Onions, celery, etc. to taste

Combine vinegar, water, sugar, salt, pepper and mustard in medium saucepan. Bring to boil. Reduce heat, gradually beat in well beaten eggs. Cook over medium heat, stir constantly, until slightly thickened, for about 5 minutes. Stir in salad dressing. Toss together potatoes, etc. Pour on dressing, toss gently.
