8 medium potatoes, boiled with skins on
2 tbsp. minced onions
2 tbsp. parsley
2 tsp. salt
1/2 tsp. pepper
dash of red pepper (optional)
2 tbsp. vinegar
8 tbsp. salad oil

Mix together all ingredients except potatoes in order. Peel potatoes and dice while warm. Pour sauce over the warm potatoes and mix thoroughly. Add mayonnaise or salad dressing to taste when ready to serve.
