GINNY'S HEALTHY POTATO SALAD | |
10 medium red potatoes, cooked in skins and quartered small bunch green onion, chopped 1/4 cup olive oil cider vinegar, to taste 2 tbsp. basil-flavored rice vinegar, optional 1 tsp. sugar 1 clove garlic, crushed 1 tsp. oregano salt and pepper to taste Mix onions, oil, vinegars, sugar and spices, shake in a jar. Pour over warm potatoes and chill. Best if chilled overnight. Note: Olive oil may turn solid clump when chilled, so warm in the microwave on low power just enough to make the olive oil liquid prior to serving. Submitted by: Acoach22 |
