SOFT GINGER MOLASSES COOKIES 
3/4 c. butter
1 c. light brown sugar, packed
1 egg
1/4 c. molasses
2 1/4 c. flour
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. ginger
1/2 tsp. cloves
Granulated sugar

Cream butter and sugar; add egg; mix. Add remaining ingredients and mix well. Make into balls the size of walnuts and roll in granulated sugar. Bake at 375 degrees for 9 minutes. These cookies will be very soft to the touch. They harden somewhat when they cool. Do Not Overbake or the cookies will be hard.

This is my go-to recipe. If you like thick, soft, chewy, molasses and cloves cookies, this gets you exactly what you want. The lower-starred reviews aren't complaining about the recipe -- just that they didn't want chewy, or didn't want thick, or didn't want cloves.

Just curious, how many cookies did everyone get out of this? I was able to make a dozen and I also substituted nutmeg for the cloves and they were incredible! Definitely going to be a family favorite :)

Made w/ the Splenda Brown Sugar Blend as a substitute for the light brown sugar, and whole grain whole wheat all purpose flour. Tastes great! Very similar to the Tim Horton's ginger molasses cookies, but less sweet (possibly b/c of my sugar substitute). Had to bake them for a few extra minutes. Not as thin as I'd like, but that can be fixed by flattening out instead of rolling into balls b/f baking.

I never was a fan of spice type cookies, however, these rock! I like the soft middle and exchanged cloves (not a fan) for Nutmeg (am a fan)! I couldn't stop eating them!
