SOFT MOLASSES GINGER COOKIES 
1 c. shortening
1 c. sugar
1 c. light molasses
1 tbsp. vinegar
2 eggs, beaten
5-6 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. ginger
1/2 tsp. salt

Bring shortening, sugar, molasses, and vinegar to a boil. Cool. Add eggs and dry ingredients. Chill. Roll out to 1/4 inch, cut and place on greased cookie sheet. bake at 350 degrees for 12-15 minutes. Do not over bake.
