LAMB CHOPS IN A GREEK JACKET 
6 lg. loin lamb chops
1 tsp. salt
1 tsp. oregano
Freshly ground black pepper
2 cloves garlic, minced
6 sm. zucchini, halved
6 sm. yellow crookneck squash, halved
1 bunch green onions, chopped
1/4 lb. Kasseri or feta cheese, cut into 6 squares
3 tbsp. lemon juice
1/4 c. butter, melted
Salt and pepper to taste

Season each chop with a mixture of salt, oregano, pepper and garlic. Place each chop on a large double square of foil, and lay 2 zucchini halves and 2 crookneck squash halves on each. Scatter onions on top, and add a square of cheese. Drizzle vegetables with lemon juice and butter, and sprinkle them lightly with salt and pepper.

Fold the squares of foil into a double fold at the top and sides; secure sides with paper clips. Place jackets in a baking pan and bake at 350 degree oven for 1 hour. May be grilled over charcoal, turning once, for 1 hour. Remove clips and place sealed jackets on dinner plates.

WARNING: Hot steam may escape when unwrapping, so you may want to take jackets off before serving!
