VEGETABLE SOUP 
1 c. chopped celery
2 c. chopped spinach
1 c. chopped carrots
1/2 c. chopped parsley
1 tbsp. honey
1 qt. distilled or spring water
1 c. V-8 juice
1 tsp. vegetable salt

Combine vegetables, honey and water in soup pot. Cook for about 25 minutes on medium low heat. Add V-8 juice and vegetable salt. Simmer about 10-15 minutes longer.
