CRANBERRY ORANGE BREAD 
2 c. all-purpose flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 c. sugar
1 egg, beaten
1/2 c. orange juice
Grated rind of 1 orange
2 tbsp. melted butter
2 tbsp. hot water
1 c. raw whole cranberries
1 c. coarsely chopped walnuts

Combine flour, baking powder, soda, salt, sugar in a large mixing bowl; set aside. Mix beaten egg with orange juice, rind, butter and hot water. Fold flour mixture into egg mixture until blended. Don't beat. Gently fold in the cranberries and walnuts.

Spoon into 9x5x3 inch loaf pan. Bake at 325 degrees for 60 minutes. Test with toothpick. Cool on rack 15 minutes before removing. Yield: 1 loaf.
