SAUSAGE FRITATTA 
12 sausage links
10 eggs
2 scallions
1 onion (red)
6 oz. Monterey Jack or Swiss, grated
1/3 c. milk
Salt & pepper
1/2 c. chopped parsley

Cook sausage in 2 tablespoons water, covered, medium heat for 5 minutes. Remove cover. Cook until water disappears. Remove sausage. Cook onions in sausage pan for 2 minutes.

Heat oven to 425 degrees. Butter 2 round pie pans. Whisk eggs, milk, salt and pepper. Add cheese. Arrange sausage in star. Add onions, then eggs. Sprinkle top with scallions and (or) parsley. Bake 20 minutes until center is done. Serves 8.
