CHRISTMAS DATE NUT CAKE 
4 whole eggs
8 c. pecans
1 1/2 c. Brazil nuts
2 c. flour
2 c. candied pineapple
2 c. candied cherries, halved
1 c. sugar
1/2 c. rum
2 tsp. vanilla
2 tsp. baking powder
1/2 tsp. salt

In large bowl beat eggs. Gradually add sugar and vanilla; cream together. Add flour, baking powder, salt, and nuts and fruit mixture, mixing well after each addition.

Line 2 loaf pans with wax paper, glassy side inward. Divide batter between 2 pans. Firmly mash into pans until mixture is compact. Place in cold oven. Bake at 325 degrees for 1 hour.
