SHERRIED ONIONS AU GRATIN 
2 lg. sweet onions (about 2 lbs.), sliced
1/4 c. butter, divided
2 eggs
1 c. chicken or beef broth
1/2 c. sherry
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. thyme
1/2 c. fresh bread crumbs
1/4 c. shredded Cheddar cheese

Saute onion slices in 3 tbsp. of the butter until they start to wilt, about 10 minutes. Transfer to shallow baking dish. Beat eggs with broth, sherry, salt, pepper and thyme. Pour over onions.

Bake uncovered at 350 degrees for 30 minutes. Melt remaining 1 tablespoon butter; stir in bread crumbs, then the cheese. Sprinkle over onions and return to oven for 25 to 30 minutes or until crumbs are golden and onions are tender. Makes about 8 servings.
