RITZ PIE 
3 egg whites
1 c. sugar
1/2 tsp. vanilla
1/2 tsp. baking powder
20 crushed Ritz crackers
3/4 c. finely chopped pecans

Beat egg whites until very stiff. Slowly add sugar, vanilla, and baking powder. Fold in crackers and pecans. Spread in well-buttered 9-inch pie pan. Bake 30 minutes at 350 degrees. Top with 1/2 pint heavy cream, whipped. Chill several hours or overnight before serving. Serves 8.
