18 Ritz crackers, crushed fine
3 egg whites, beaten stiff
2/3 c. sugar, half added to whites
1 tsp. vanilla
1/2 c. dates, chopped

Cook 20 minutes at 350 degrees. (If using muffin tins, grease tins.) Top with Cool Whip and cherry.
