QUEEN'S PRALINES | |
2 c. sugar 3/4 c. milk Pinch of soda 1/3 stick butter 2 c. pecans 1 tsp. vanilla Mix sugar and milk in very large pot. In small iron skillet, caramelize 1 heaping kitchen spoon of sugar. While this is caramelizing, put on fire the sugar and milk mixture. When this begins to boil, add a pinch of cooking soda. After the mixture bubbles up and then comes again to a boil. add the liquid caramelized sugar. Cook for 7 minutes. When mixture makes a soft ball in cold water, add 1 teaspoon of vanilla, 1/3 stick of butter and 2 cups pecans. Remove from fire and beat until you note hardening around edges. Drop by tablespoonful onto wax paper. |
