QUEEN'S FAVORITE COBBLER | |
This is excellent served while warm. For extra flavor, top with whipped cream or vanilla ice cream. 1/2 cup (1 stick) butter 1 cup sweet milk 1 cup self-rising flour 1 cup sugar 4 cups sliced peaches (sweetened to taste) Melt butter in an average size dish (approximately 9x12-inches). Add sweet milk to self-rising flour and sugar. Mix these 3 ingredients thoroughly and add to the melted butter. Add sliced peaches (sweetened to taste) and do not stir. Bake at 375°F for approximately 40 minutes or until browning is noted. Note: Canned or frozen peaches may be substituted for fresh. If plain flour is used, add 2 teaspoons baking powder. |

I do not have a 9x12-inch pan and cannot remember which I used... but know it was not a 9x13-inch... it would make it too thin. I thought of my 7x11-inch pan. My husband made it in that size Pyrex pan today. There was a little spill-over. He said he may have had a little more than 4 cups of peaches.
The fresh peaches he used tasted a bit under-ripe, so he added a heaping tablespoon of sugar to them and let them stand while he mixed the batter... just right. So I suggest tasting the peaches to determine if you need a little sugar on them.
