FINNISH WHOLE WHEAT BREAD 
2 pkgs. yeast
1/2 c. brown sugar
4 tsp. salt
1 qt. lukewarm milk
7 to 7 1/2 c. white flour (approximately)
1/2 c. warm water
1 tsp. sugar
2 c. whole wheat flour
3 tbsp. butter

Dissolve the yeast in the warm water with the 1 teaspoon sugar. Heat the milk until lukewarm. Add the brown sugar, salt, and whole wheat flour; mix well. Add the dissolved yeast; mix well. Add the white flour. Knead until smooth. Butter the dough with the butter and knead well. Let rise for 1 1/2 hours. Divide into 4 equal parts and form into 8 or 9 inch round loaves. Let rise on a towel that has been sprinkled with whole wheat flour for 40 minutes. Flip onto cookie sheet. Bake at 350 degrees for 50 minutes.
