FINNISH FLAT BREAD | |
1 1/2 qts. milk 2 pkgs. fast rising dry yeast 12 c. flour 6 tbsp. sugar 2 1/2 tbsp. salt 4 tbsp. melted shortening Scald milk and cool to lukewarm. Add yeast (which has been soaked in 1/2 cup of lukewarm water for 10 minutes), 8 cups flour, sugar and salt and beat well with a wooden spoon for about 5 minutes. Add shortening and beat well. Add remaining 4 cups of flour gradually and knead dough. Place in a greased pan to rise to double bulk. Knead down and let rise until light. Divide dough into 6 parts and roll out with a rolling pin to 1 inch thickness and set on a towel sprinkled with flour. Let rise for 1/2 hour and bake in 325 degree oven until golden brown. |
