FINNISH FLAT BREAD 
1 1/2 qts. milk
1 dry yeast
12 c. flour
5 tbsp. sugar
4 tsp. salt
3 tbsp. melted shortening

Scald milk, cool to lukewarm. Add yeast (which has been soaked in 1 1/2 cups lukewarm water), 8 cups flour, sugar, salt and beat well. Add shortening, beat. Add remaining flour and knead. Let rise 2 1/2 hours. Knead down and rise 1 hour.

Divide dough into 6 parts and roll with a rolling pin to 1 inch thickness and set on towel sprinkled with flour to rise 1 1/2 hours. Bake at 325 degrees until golden brown.
