FINNISH WHOLE WHEAT BREAD 
2 pkg. dry yeast
1/2 c. warm water
1 tbsp. granulated sugar
1/2 c. brown sugar
4 tsp. salt
2 c. whole wheat flour
1 qt. milk, scalded
7 1/2 c. white flour
3 tbsp. soft butter

Dissolve yeast in water with granulated sugar. Stir brown sugar, salt and whole wheat flour into lukewarm milk. Add yeast mixture, mix thoroughly. Blend in white flour. Knead until smooth. Butter dough well, let rise for 1 hour and 30 minutes.

Divide dough into 4 equal parts, form into 8 or 9-inch round flat loaves. Let rise on a towel sprinkled with whole wheat flour for 40 minutes. Flip onto cookie sheets. Bake at 350 degrees for 40-50 minutes. Prick top with fork several times before baking.
