VIIPURI - FINNISH CHRISTMAS
BREAD
 
5 1/2 to 5 3/4 c. flour
2 pkgs. yeast
1/2 tsp. ground cardamom or 10 to 12 whole cardamom ground
1/2 tsp. ground nutmeg
2 c. milk
3/4 c. sugar
1/4 c. butter
1 tsp. salt
2 eggs
1 tbsp. water

Combine 2 1/2 cups flour, yeast, cardamom and nutmeg. Heat milk, sugar, butter and salt until warm. Add to dry mixture, add 1 egg. Beat with mixer at low speed for 1/2 minute and at high for 3 minutes. By hand beat in remaining flour to make moderately stiff dough. Knead, place in greased bowl, cover and let rise until double.

Punch down. Divide in thirds or fourth; let rest 10 minutes. On floured surface, shape into ropes and form ropes into pretzel shaped roll. Place on greased baking sheet. Let rise until double. Bake at 375 degrees for about 20 minutes. Beat remaining egg and water. Brush egg mixture on hot breads.
