FRESH HUCKLEBERRY PIE 
1 (9 inch) baked pastry shell
1/2 qt. washed and drained fresh huckleberries
3/4 c. water
3 tbsp. cornstarch with 1 c. sugar
1 tbsp. lemon juice (optional)

Simmer 1 cup berries with water for 3 or 4 minutes. Add sugar and cornstarch to cooking fruit and cook until thick and clear, stirring constantly. Cool. Blend in fresh berries and spread in shell. Serve with whipped cream or Cool Whip or ice cream.
