PUFFS FOR DESSERTS OR APPETIZERS | |
1 c. boiling water 1/2 c. butter 1/2 tsp. salt 1 c. flour 4 eggs Put butter, water, and salt into large saucepan, heat to rapid boil. Remove from heat; add flour all at once. Stir vigorously until mixture forms smooth ball. Beat in 1 egg at a time until batter is thick and shiny. Drop batter by tablespoon for small puff or 3 tablespoons for large puff, on lightly greased sheet. Bake at 450 degrees for 15 minutes then reduce heat to 350 degrees and bake 20 minutes longer. Cool. Can be filled with crab, ham, or shrimp salads. Or custard, or whipped cream and topped with chocolate icing. |
