SCALLOPED SWEET POTATOES AND
APPLES
 
2 c. sweet potatoes, cooked and sliced
2 c. raw apples, sliced
1/2 c. brown sugar
3 tbsp. butter
1/2 tsp. salt
1/4 tsp. cinnamon
1/4 c. hot water
1 tsp. shredded orange peel

Butter casserole dish, arrange sliced apple on bottom, cover with layer of sliced sweet potatoes, then sprinkle with a part of mixed sugar, salt and cinnamon. Add orange peel with half of the butter.

Repeat the layer of apples, sweet potatoes and seasoning. Pour hot water into dish. Cover. Bake in moderate oven until apples are tender, uncovering the dish at the end of 40 minutes so that the top will be brown. Continue baking for 20 minutes.
