EGG CASSEROLE 
1 lb. bacon in large casserole pan

Bake 1/2 hour at 350 degrees. Don't drain grease.

Sprinkle hash browns or O'Brien potatoes over bacon. Add a touch of salt, pepper, green peppers, onions, pimentos, etc.

Cook another 1/2 to 3/4 of an hour.

Pour eggs (4 to 6) over has browns. Scrambled: Mix with no milk, and use no lid. Poached: A lid is needed.

Cook another 15 minutes. Add Cheddar cheese. Cook for another 15 minutes or until firm. Cool 5 to 10 minutes and cut into squares, serve.
