PEANUT BUTTER WHEEL LOAF | |
2 pkgs. yeast 1/2 c. warm water 1/2 c. butter 1/4 c. sugar 2 tsp. salt 1 c. hot milk 2 eggs Grated rind of 1 orange 5 to 5 1/2 c. flour, sifted 1/2 c. orange marmalade 1 c. raisins 2 c. powdered sugar 1/4 c. orange juice 1/2 c. peanut butter Mix yeast and water until dissolved. Combine butter, sugar, salt and warm milk. Stir in melted butter. Stir in yeast, eggs and orange rind. Stir in flour until dough is stiff. Turn out dough on a floured surface and knead five minutes or until smooth and elastic. Replace in bowl, cover and let rise until doubled in bulk. Punch down dough and cut into 2 pieces. Roll out each piece on floured board to 9 x 12 inch oblong. Spread each piece with some peanut butter and orange marmalade. Sprinkle with raisins. Roll up each piece starting at the 9 inch side, like a jelly roll. Press ends of roll together and seal. Place seam down into 2 greased 9 1/2 x 5 x 3 inch loaf pans. Let rise until double in bulk. Bake in preheated oven at 350 degrees for 40 to 45 minutes or until loaf, when thumped, sounds hollow. Cool. Makes 2 loaves. |
