BANANA WALNUT LOAF 
1 1/3 c. flour
1/4 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. baking soda
3/4 tsp. baking powder
3/4 stick (6 oz.) butter, cut into 6 pieces
1/2 c. sugar
1 tsp. lemon juice
1 tsp. vanilla
2 ripe bananas, peeled
2 eggs OR scant 1/2 c. egg substitute
1 c. walnut meats

Turn oven on and set at 350 degrees. Grease a loaf pan that holds at least 5 cups. Sift first 6 ingredients together and set aside. Put next 4 ingredients into bowl of food processor and process for about 20 seconds. Slice the bananas, add to food processor and process for about 6 seconds. Add eggs or egg substitute and turn processor on and immediately off. Add walnuts and turn machine on and immediately off. Add flour mixture and turn machine on and off 4 or 5 times, until flour just disappears. Pour mixture into loaf pan and bake for 1 hour or until toothpick comes out dry.
