BRANDIED FRUIT CAKE 
Combine 1 1/2 cup cooking oil, 2 cups sugar. Beat well. Add 3 eggs, one at a time beating well after each. Sift together 1 teaspoon baking soda, 3 cups sifted flour and add to sugar mixture. Fold in 3 cups drained Brandied Fruit, 2 cups chopped pecans and 2 teaspoons vanilla. Bake in greased and floured large bundt pan at 325 degrees for 1 hour or until brown and cake test shows done.

NOTE: My bundt pan is large but it doesn't hold all the batter, so I bake the remainder in a small angel cake pan.
