COTTAGE CHEESE BARS 
1/2 c. butter
1/4 c. sugar
1 egg yolk
1 1/4 c. flour
1/4 tsp. salt

Blend and pat in 9 x 13 inch pan and 1 inch up sides. Sprinkle crust with 1 tablespoon sugar and 1 tablespoon flour.

FILLING:

1 1/2 lbs. lg. curd creamed cottage cheese
3 beaten eggs
1 egg white
1/2 c. milk
1/4 tsp. salt
1 tsp. vanilla
3 tbsp. flour
3/4 c. sugar
1 c. raisins
1/2 tsp. cinnamon

Beat cheese in blender. Add eggs, egg white, salt, milk, vanilla, flour, and sugar. Pour over crust and add raisins. Sprinkle with cinnamon. Bake 15 minutes at 375 degrees, then 325 degrees for 15-20 minutes. (Nuts may be added and chopped dates instead of raisins.)
