FRUIT AND COTTAGE CHEESE SALAD 
1 (#2) can crushed pineapple
2 regular boxes strawberry or lemon Jello
1/2 c. chopped English walnuts or pecans (optional)
1 sm. box Cool Whip or Dream Whip
1 lg. box sm. curd cottage cheese

Dissolve Jello in 2 cups hot water, cool; add crushed pineapple, cottage cheese, and fold in Cool Whip. If desired, you may add 2 tablespoons sugar. Nuts may be sprinkled over top. Let chill 4 hours or overnight.

to NOT use canned pineapple.

w/r/t Tom Cook, the back of Jello boxes states not to use fresh pineapple. Canned pineapple being prefered as it does not contain the jello-killing-enzyme known as "Bromelain"
