SPICED BEEF | |
1 lb. boneless beef 2 tbsp. coriander powder 1 tbsp. paprika 1/2 tsp. turmeric 2 cardamom (seeds used) 1/2 tsp. ground cinnamon and 1/2 tsp. cloves 1 tsp. fresh ginger root 1 tsp. garlic, chopped in sm. pieces 1/2 bell pepper, chopped 1/2 hot green pepper; optional 1 med. red onion, chopped in sm. pieces 2 tbsp. cooking oil 2 tsp. whole mustard seed Fresh curry leaves or coriander leaves; optional (gives flavor) Salt as needed Cut beef into small cubes. Add coriander powder, paprika, turmeric, cardamom, ground cinnamon, cloves, fresh ginger root, garlic, bell pepper, and hot green pepper. Add water just enough to cook the meat fully and cover the meat. (You may add hot water while cooking if water is not enough.) Cook the meat on high for 15-20 minutes. Lower the heat and cook for another 15-20 minutes or until the beef is cooked. When the beef is done, season if in a skillet. Put the oil in the skillet. When the oil is hot, add mustard seed. When the mustard seed pops, add onion, curry leaves, or coriander leaves. When onion is browned, lower the heat and add the cooked beef. Stir a few minutes. Ready to serve with cooked rice or any kind of bread. Leftover may be kept in the refrigerator and may be reheated. |
