CARROT BREAD 
1 c. sugar
3/4 c. oil
1 1/2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. salt
1 c. grated carrot
2 eggs

Mix sugar and oil in large bowl. Stir together dry ingredients in separate bowl. Combine. Add carrots. Add eggs one at a time. Bake at 350 degrees for 45 minutes in loaf pan.

Note: Recipe is easily doubled and bread freezes well.
